Croissants: While using highly sophisticated equipment to make our croissants, we still follow the original European "homemade" recipe that involves 3 steps.

1) Kneading: Once all the ingredients have been blended, the dough is kneaded mechanically with electronic equipment that consistently produces dough pieces that are identical in terms of shortening content and number of turns. Our shortening is a margarine with natural butter flavoring which texture enables us to maintain 100% of the quantity of shortening needed (compared to butter, of which more than half melts during baking). As a result, our croissant margarine yields exceptionally flaky croissants with 100% butter flavor.
